Taiwanese Beef Noodle Soup

Beef noodle soup is the Taiwanese national soup. Made of stewed or red braised beef, beef broth, vegetables and Chinese noodles, it is often stewed and simmered for hours. Beef noodles are served with suan cai (Chinese sauerkraut) and scallions on top. At beef noodle soup shops in Taiwan, you also can find cold side dishes such as braised dried tofu, seaweed, or pork intestine.
