Güvenç Konyalı
Around the corner from Sehzade is this legendary spot run by uber grill master Hüseyin Güvenç. Vedat Milor describes his signature dish: When Konya cuisine is mentioned, the first dish that comes to mind is etli ekmek (meat bread). It holds its own alongside lahmacun, pide, and pizza. The meat is minced with a cleaver into cubes, which are called bıçakkarası”. The tomatoes, peppers, and onions inside are also finely chopped with a knife. The flour used must be the hard, Konya flour and the dough must be rolled out very thinly and baked in a wood-burning oven. The key to its delicious flavor is a soft center. Güvenç Konyalı's etli ekmek successfully meets these criteria.
