Chicken rice is a beloved Singapore dish - marinated poached chicken served on rice that's been cooked in chicken stock and fat. Sin Kee was hugely popular for decades at the (now demolished) Margaret Drive hawker center where they started. Their steamed chicken is plump, tender and juicy. It's skilfully chopped into thick boneless slices that feel so satisfyingly smooth in the mouth. The rice is not too oily but is gently al dente and intensely flavored from a good stock.
