Barraca Toni Montoliu
Paella

Toni Montoliu is the embodiment of the historic traditions of Paella Valenciana. He should be named a Unesco treasure. He fiercely conforms to the original 10-ingredient recipe (no seafood!). He uses only locally sourced vegetables, many of which come from his garden located at the ranch where the paella is prepared and served. In Mark's video, you can see him tilling the garden with his horse! Located in a neighborhood called Huerta, which means vegetable garden, the Barraca de Toni Montoliu is a traditional country dwelling, defined by its white walls and steep gable roof. Here people come and immerse themself in the traditional country lifestyle. The paella is cooked over a wood fire (with wood from orange trees), as tradition dictates. This is one of the greatest culinary experiences in the world.
