This sandwich is a lot easier to look at than it is to eat. Located just inside Guanajuato's Hidalgo market, it's built on a bolillo with pork skin (chicharrón) and sliced avocado, then covered in a firery sauce made from chiles de arbol and pico de gallo. Squeeze on the lime and dig in. Take the edge off this spicy feed with an ice-cold cerveza.
