When you arrive at the brick-walled, open-kitchen space of Staple and Fancy, follow the menu’s advice and order the four course ‘fancy’ option. One of Seattle’s most prominent chefs, Ethan Stowell, offers an affordable option that will wow you with value and flavor. The Fancy menu is the best deal you’ll ever find: $50 for four courses, the first of which is an endless parade of tapas ranging from fried oysters to charred padron peppers, hamachi crudo to house-made ricotta. By the time the second—pasta—course comes, you’ll feel like it’s second dinner. It would be a problem if the signature cheesecake that is course four weren’t so light, fluffy, and smothered in a sauce of local, seasonal fruit. The menu is made up of the chef’s whims, perhaps his favorite foods, perhaps a cool ingredient that there was not enough of to make into a menu item. It is hard to imagine a better meal; the anticipation of unknown foods combined with faith that whatever will hit your table will be delicious.
