Snakehead fish is one of the most common forms of grilled fish in Bangkok. It’s first stuffed with lemongrass and rolled in a thick coat of salt before being thrown on the grill. The salt keeps it insulated so the fish is moist and flaky. It’s then served with a spicy Thai seafood sauce made of chillies, garlic, lime juice, fish sauce, and sugar.
