Sai ua, a northern Thai sausage that is flavoured with lemongrass, galangal, and chilies, is very popular in Chiang Mai, and there are countless places to get it. Sai Ua La Wan, located at Ton Payom Market, offers a real meaty version, with a nice well-rounded balance of flavors. This version is less herby and meatier, more like a European sausage.
