Sisig

In 2008, Anthony Bourdain stopped by Aling Lucing’s roadside sisig joint for an episode of “No Reservations” to eat the most-talked-about sisig in Angeles City. Sisig, made with pig's head, face, ears and chicken liver sauced with lime, vinegar, chiles and minced onions, is considered the invention of the late Aling Lucing. But another story has it that Lucing was hosting a big party and asked Aling Mila (of Mila's Tokwa't Baboy) to provide some food. When Lucing came by Mila’s home to pick up her order, she noticed a plate on the side and asked Mila what it was. Mila said she was experimenting and burned it and just to leave it. Lucing took it anyway and it was the hit of the party. There was such a clamor for it that Lucing opened Aling Lucing's restaurant in 1974. The popularity of her sisig helped establish Angeles as the “Sisig Capital of the Philippines” and she was dubbed the "Sisig Queen.”
