Chilli Crab is one of Singapore's most popular culinary inventions. Mud crabs are stir fried in a sweetly savoury tomato and chilli based sauce thickened with egg and brimming with spices. But it's not as spicy as it looks. You'll find it at most Chinese seafood restaurants but Hua Yu Wee's version is luxuriously smooth and well-balanced.
