Holding the claim as the UK’s first zero-waste restaurant, Silo presents an environmentally friendly concept and outstanding food. There are just five dishes; one plant, one dairy, one foraged, one fish and one meat. A favorite is the succulent, meltingly tender ox cheek with buckwheat and caramelized onion, caramelized celeriac puree, crisp raw turnip and braised purple kale. ¬But what makes it truly exceptional is the rich meat consommé and smoked rapeseed oil, which adds new dimension to the dish. The restaurant’s unique concept has not compromised the taste of the delicious food.
