Tortilla de Camarones

This legendary Spanish tavern was founded in 1985 and is located in the main square of Sanlucar which is 30 minutes from Cadiz. The Tavern is known as the "Templo de Tortilla de Camarones" - The Temple of the fried shrimp omelette. This ear-shattering concoction is so delicious that it has become famous across Spain. The tiniest little prawns in the area are called Camarones. They are sold in markets alive and jumping. They are the size of the top of your little finger. Mixed with chopped onion, parsley, flour (sometimes chickpea flour), salt and water, then fried at top temperature, they are lacey, crispy and unforgettable, especially when served alongside a copa of chilled Fino or Manzanilla.
