White Pork Knuckle Sausage with Sauerkraut and Cumin
It's phenomenally difficult to cook a good white sausage, as you only have to take your eye off it for a moment and its burst in the boiling water. Golonkarnia side- stepped this issue by hiring a chef with a stopwatch for a brain, who had the additional great idea of adding a spice more usually associated with Indian cuisine to a Central European staple.
