As the only Michelin-star restaurant that focuses purely on Czech cuisine, La Degustation is a frontrunner of the revival of Czech cuisine. The cooking is based on a Czech cookbook from 1894 but the technique and the presentation are cutting edge. The kitchen headed by Executive Chef Oldrich Sahajdak employs young, talented chefs who process local, seasonal produce delivered to the restaurant fresh every day, spending half the time in the kitchen and half the time in the restaurant’s food lab.
