Guy Savoy

One of the iconic chefs of France, Guy Savoy now has a global restaurant empire but his flagship is in Paris. The emphasis is on showcasing the finest possible seasonal ingredients, the cooking classical and style and generous with luxury ingredients such as truffles. However even seemingly humbler dishes can dazzle, such as green pea jelly and puree served with a poached egg and salad, the sweetness of the peas remarkable, the flavors intense. Artichoke soup with black truffles and Parmesan has great depth of flavour, and the pastry section is no slouch either: chocolate mousse and fondant with lime is a lesson in technique and balance.
