SEAFOOD
Ceviche @ La Mar

There's only so much steak you can eat in Buenos Aires until you get a major seafood craving, and when that hunger pain strikes, a ceviche at La Mar is your answer. Gastón Acurio's restaurant empire makes its way to Buenos Aires with a true Peruvian cevichería that uses only local Argentine fish and seafood. Chef Anthony Vasquez and his crew traveled across the country in search of the best product available, and came back with creative flavors and textures from the sea. The outdoor patio is ideal for drinking pisco and eating ceviche by the spoonful.

DESSERT
Dulce de leche flan @ Proper Restaurant

The new kid on the block restaurant was a hit since the day it opened. A young crew of chefs converted an old mechanic shop into one of BA's best new underground spots. Almost every dish is cooked in the custom-made wood-fired oven that stands at the heart of the restaurant, with a menu that changes regularly depending on what's fresh at market. Think Mediterranean-inspired twists on familiar Argentine ingredients. Go with a group, take over the communal table, and order everything on the small plates menu, making sure to order dessert, especially Pastry Chef Augusto Mayer's infamous dulce de leche flan with whipped cream.

INDIAN
Chicken 65 @ Buhari Hotel

Chicken 65, a spicy, deep-fried chicken dish, originated in Chennai, India, as an entrée or a quick snack. The flavor of the dish can be attributed to red chilies, but the exact set of ingredients for the recipe varies. Prepared using boneless or bone-in chicken, it usually is served with onion and lemon garnish. While the name Chicken 65 is universally used to refer to the dish, there are many theories claiming its origins. One says Chicken 65 was introduced in 1965 at the Buhari Hotel restaurant in Chennai by its founder, A.M. Buhari. Season 1 of Amitabh Bachchan’s television show “Kaun Banega Crorepati,” featured Chicken 65 as a Buhari invention, as did Siddharth Basu's "Quiz Time" on Doordarshan in the 1990s and a report in “The Hindu” in 2013.

BEVERAGES
Matcha Latte  @ Kaph

Drury Street is one of the cutest little streets in Dublin. It's always full of life and is home to some nice shops and cafés, such as Kaph. It is one of the best places to find a good cup of coffee on the south side of the city. And, like several other places, such as Tang, they use coffee from the well-known 3FE. The space is very limited. However, this is part of its charm and I've definitely enjoyed several winter afternoons on the upper floor. Their menu includes my favorite matcha latte and coconut milk options, as well as some selected cakes. If you're around, don't hesitate to stop by. Their staff are friendly and the relaxed atmosphere will make you want to chill there for a while. Enjoy your coffee.

BURGER
Cheeseburger @ Bunsen

I have to admit I was skeptical about Bunsen the first time I heard about it. Dublin definitely had room for improvement in terms of burger offerings, as the ones at Jo'Burger or The Gourmet Burger Kitchen don't raise the bar for me. But Bunsen's menu just seemed too simplistic to me. I couldn't be more wrong. The flavors in the cheeseburger are perfect. The homemade bread, tender meat and melted cheese create the perfect combination. No other restaurant comes close. If you're feeling like having fries, go for the hand-cut ones. These burgers are definitely a game changer in the city. Head over to the branch on South Anne Street for a great open-air area. But be careful, because these burgers are addictive and you will have to come back.

PORRIDGE
Creamy Organic Porridge  @ Tang

You know the feeling of getting extremely excited when you discover a game-changing place in town? That's exactly how I felt about Tang. After reading their inspiring story, you can really tell these guys love what they do and they want you to feel right at home. Their piping hot porridge cooked in coconut milk is served with honey and topped with yogurt, oatless granola, bananas, nut butter, fresh berries, passion fruit and mixed seeds. The smashed banana and berries is from another world — so simple, yet so good. Right next to St. Stephen's Green, this place has made it to the second position on my list for breakfast places in Dublin after Fumbally. Having a good menu and the best ingredients definitely pays off in the long run. Oh, and of course, they also serve coffee from 3FE, which makes them perfect in everything they do. Take into account the space is very small and you will most likely have to wait for a free spot, but it will be worth it.

BURGER
Nineteen Organic Irish Burger  @ Green 19

Green 19 is the perfect modern Irish restaurant and has won a spot on my list of top 10 favorite restaurants in Dublin. Together with Hatch & Sons, they have managed to offer the best of local culinary traditions adapted to the finest palate. Their brunch menu is particularly appealing for tourists, as it includes their version of the typical Irish breakfast, which I totally recommend for a winter morning. The portion is suitable for smaller appetites and it will make you feel like you truly tasted Ireland at its best. I am also keen on their dinner menu, which is able to satisfy a diverse range of tastes at different price ranges. Their Nineteen Organic Irish Burger, with cheese, pickles, onions, homemade ketchup and chips, is always a safe bet. Head over to Green 19 for one of the best culinary experiences you can have in the city. No Guinness is served here unfortunately!

PIZZA
Jules Pizza  @ Skinflint

Skinflint has definitely made it to the top of my list of restaurants in the city. Often forgotten by the masses, it offers a great combination of atmosphere, food service and location. The Jules Pizza definitely has to be my favorite, which takes a modern approach to pizza by including eggs and mushrooms. Their meatballs are also delicious and you won't regret trying their pizza with Spanish jamón either. Who would have thought such a gem would hide on one of the dodgiest streets in Dublin? The place is big and suitable for big groups, which makes it fairly easy to get a table in a few minutes. I do find their beer selection quite limited for an Irish restaurant, so you might want to think of going for wine this time.

Amsterdam
REGIONAL SPECIALTY
Barley “risotto” with Bbq leek, “Messenklever” cheese and Jerusalem artichoke @ Restaurant Lt. Cornelis

Lt. Cornelis is just off Spui square in the heart of the tourist center of Amsterdam. It's a hidden gem I recommend to locals as well as visitors who want to try Dutch food. The kitchen takes Dutch dishes and ingredients and gives them a modern twist. Expect plenty of "vergeten groenten" (heritage vegetables) on the menu, alongside local fish (herring and mackerel) and meat (lamb and beef). The restaurant is decked out with replicas of paintings by the Old Dutch masters of the Golden Age and is very atmospheric. Don’t miss the “Alkmaars” pearled barley risotto with barbecued leeks and Messenklever cheese.

ASIAN
Zakura @ Zakura

Zakura is the best Asian restaurant in the south side of Dublin. Although Dublin's sushi scene has by no means reached the standards of some other European cities, Zakura is the place to go for one of the tastiest experiences in town. The diverse menu ranges from a big selection of sushi to vegetarian and chicken ramen, tasty rice dishes and gyoza. You can BYOB and spare some money in drinks. The staff is friendly and accommodating, and you won't have to join unnecessary queues. The restaurant is full every day of the week, as it's on one of the most popular streets in the city.
