Take a young, ambitious and highly talented chef like Kurt Schmidt and give him access to the amazing larder of ingredients available in Chile, plus training in some of Europe’s finest kitchens, and you have one of Santiago’s most interesting restaurants to debut recently (appearing on the 2015 Latin America’s 50 Best list). In the bustling Providencia business district, this super-casual but gastronomically sophisticated spot truly gets Chilean refined cuisine. Every dish extracts the maximum flavor from some of the simplest and most overlooked ingredients. While the menu rotates seasonally, a dish that has stayed constant is focused on mushroom textures in different varieties and raw, cooked, powder and puree forms. Lunch is casual and dinner is either a six- or nine-course tasting menu. The wine list showcases small-scale producers (many are organic / biodynamic).
