Ambrosia Restaurant

One of Santiago’s best restaurants, gracing Latin America’s Best 50 list in 2015, Ambrosia existed for more than a decade in downtown Santiago before undergoing a massive reinvention. Through the renewed inspiration of its young chef, Carolina Bazán, Ambrosia reopened in Las Condes in an elegant house with wood-floor dining rooms and picture windows facing the lush garden. After her stint at Frenchie in Paris restaurant, Bazán turned the bill of fare into an eclectic collection with relaxed haute cuisine. Quality products shine here. Locos, Chilean abalone, is smoked and served in its own broth, rather than the usual poached with mayo. The sea urchin tart, a starter, takes erizo, normally eaten with onion and parsley, and transforms it into a creamy tart with a crunch from the fennel dough. The food is subtle, unexpected and delicious. Go with an open mind and palate.
