Haw Shin Kim’s original restaurant dates to 1993 and has a keen interest in pork. Ham Ji Park’s best-known dish features flap-attached ribs, marinated with gochujang and served on a sizzling platter of smoking onions with a dusting of sesame seeds and scallions.
