It’s hard to choose the best pintxo at Bar el Globo, because there are many candidates arrayed on the crowded bar, one of the hot spots in Bilbao’s center. But the Pintxo de Txangurro, a classic pintxo of a light béchamel with spider crab piled high on a round of bread, is tough to beat. Gratinéed with a golden crust of cheese under the broiler, the delicate seafood bubbles under its creamy, gooey topping.
