Panella, one of the specialty street cuisines of Palermo, is a pancake made with chickpea flour. The fritters are usually eaten in sandwiches with sesame seeds, round and soft, and often accompanied with crocchè parsley potatoes or another specialty fried in batter, then seasoned to taste with salt and lemon.
