This is the ultimate use of a duck egg. Encased in ground goat meat seasoned with garam masala and cooked until crumb-like, the egg is deep fried in its coating. Cut in half to reveal a perfect circle of yolk, every bite is an indulgence in spicy excess and egg lusciousness. Relatively unknown in other parts of India, this dish is quintessentially Kolkata.
