Toshi Matsufuji, a great young chef and son of the late Darío Matsufuji, a famous Japanese-Peruvian chef, bases his chalkboard menu around the fish he finds at the market that day. His Cachete de Robalo, seabass cheeks pulled right out of the fryer and tossed in the wok with garlic are not to be missed.
