Every morning 30 sheep go into the underground ovens of three Mechoui stands at the North end of Jemaa el-Fnaa Market. This traditional dish will blow your mind and rank as one of the most unforgettable food experiences of your life. Around 11am, the meat gets hauled up in buckets from the underground ovens. The neck and shoulder cuts are amazingly tender but the baby ribs are killer. Sprinkle with a bit cumin / salt and enjoy. Be warned the hygiene is questionable but worth the risk.
