Nodaiwa

5th-generation Kanejiro Kanemoto of Nodaiwa is one of Tokyo’s living legends. Unagi, fresh water eel, is grilled over charcoal and set upon a bed of rice that is tucked into a lacquer box. Outside of Japan unagi is often served with a sweet soy sauce, but aficionados ask for shirayaki, simply seasoned with salt.
