Tojo's

This legendary eatery in a casually elegant space in Fairview is renowned for the sushi and omakase meals prepared by chef-owner Hidekazu Tojo. Tojo is credited with inventing the California roll and the B.C. roll, featuring barbecued salmon and cucumber. According to Tojo, when he started in Vancouver, Canadian tastes were not used to traditional sushi. As a result, Tojo chose to use non-traditional ingredients and to roll the sushi inside-out. Originally called "Tojo-maki," Tojo changed the name to California roll because of its popularity with visitors from Los Angeles. Fans sit at the sushi bar to watch the master at work. His local and seasonal dishes are inspired by Japan but rooted in the Pacific Northwest. Be warned: Its reputation equates to lofty prices. Anthony Bourdain of “No Reservations” stopped in to try a $50 piece of Toro sushi rubbed in wasabi, baby Dungeness crab with mustard miso dressing and daikon salad, and tender halibut cheek and morel mushrooms stuffed with local white fish.
