Chiriuchu
The Chiriuchu (or Chiri Uchu) is Cusco's most traditional dish, and while it might not appeal to everyone, it is worth trying just to sample a taste of everything traditionally eaten in Cusco, from the sea to the mountains. It is traditionally served only over the festival of Corpus Cristi in June, but now can be found in a few traditional restaurants, like La Cusquenita. It is a small mountain made up of cuy (guinea pig), chicken, sundried llama meat, Andean cheese, a torreja (a corn flour omelet with green onions), seaweed and fish roe.
