At the helm is Rafa Costa e Silva, a young chef who spent five years learning his trade under Andoni Luis Aduriz at his legendary Spanish restaurant, Mugaritz. As well as technical excellence, Costa e Silva places a strong emphasis on fresh, flavorful ingredients, with many of the vegetables being grown in his own gardens on the outskirts of the city.
