It may seem ironic that the only three-star chef in Rome is a German, but Heinz Beck has a fine grasp of Italian cuisine. A lecturer in nutrition, his cooking style is modern and lighter in style than is typical of the city. The restaurant has a glorious view from one of the hills of Rome, looking out over St. Peter’s Basilica. The room is elaborately decorated and the service reflects this, with menus of choices even for water and coffee. The fagotelli pasta is a signature here, and the culinary technique is illustrated by a modern take on osso bucco involving intensely flavored veal jelly on crispy rice.
