The story of the creation of poutine comes in two parts: At a restaurant called Le Lutin Qui Rit, a client asked owner Fernand LaChance to mix fries and cheese curds in the same bag, to which LaChance replied, “Ca va te faire une maudite poutine,” (That's going to make a damn mess) giving the dish its name. Then along came Jean-Paul Roy, owner of Le Roy Jucep, who claims to have added gravy to the cheese fries. Le Lutin Qui Rit is gone, but Le Roy Jucep carries on as the keeper of the flame for the invention of poutine.
