The corviche is one of the simplest, but tastiest snacks on the coast. For 14 years, Medardo Chalen has been serving up this little ball of fried plantain to travellers and now increasingly surfers who stroll up from nearby Ayampe to his little spot just past the bridge. He insists that the perfect corviche is made from a mixture of cooked and raw plantain, and then stuffed with a mixture of achiote, onion, peanut paste and shrimp.

Heading north along the coastal road (E15) the Ruta del Spondylous, cross the bridge just past Ayampe, turn down to the right
