Located inside the Barceló hotel in Managua Kyoto does some of the best quality sushi in town. An inside secret is their off the menu item: flamed salmon nigiri. Using a blow torch, the chefs “brulee” the top of the salmon belly nigiri: the fat melts when hit by the flame, creating a delicious almost burnt crust on top.
