Kaya Toast, Coconut Jam, Egg Cloud

This dish may sound odd when you read the description but it is on my last things to eat before I die (t) list. The Brioche is toasted and slathered with an addictive Kaya jam which is like a sweetened coconut curd and then you dip it in to a perfectly seasoned whipped egg that tastes like a cloud like described. It has the right amount of pepper and salt to balance the sweetness of the toast. A perfect reminder of breakfast in Singapore when I visited.
