Set in an elegant whitewashed colonial house with several dining spaces, the gourmet experience involves a lengthy tasting menu that balances Indian street food with hyper-modern cooking techniques.

Kolkata-born Anand trained in the kitchen at El Bulli before opening his eponymous Bangkok restaurant in 2010 to reimagine progressive Indian cuisine. Look for keema samosa, onion pakoda and pappadam with tomato chutney, lamb chops cooked sous vide and crab curry served in tiffin pots. Pro tip: Ask for a seat at the table adjacent to a giant window into the kitchen to watch the multi-national brigade show off their alchemy.
