Ultraviolet by Paul Pairet

Founded in 2012, Ultraviolet by French chef-provocateur Paul Pairet is considered by many to be the most avant-garde restaurant experience in the world. Just 10 guests each night experience the immersive dining in a secret location in Shanghai. Transported via minibus to the unmarked entrance, guests enter a cocoon-like dining space with a single spot-lit table where everyone eats together. The room then transforms throughout the evening. The high-tech gastronomic production utilizes video projections, sliding walls, audio, lighting and scents – as well as the dishes and drinks - to stimulate the senses. A classic dish, Tomato Mozza And Again features apparently identical dishes that taste strikingly different, challenging diners to guess its components through taste alone.
