Camarones are the arequipeña culinary gold, a delicacy to be savoured when in season. The chupe de camarones has become one of the white city's most famous dishes and is the one most commonly found outside of Arequipa. The 'chupe' is a milk-based soup with a whole countryside of ingredients from rice to potatoes to pumpkin, the principal flavours are thanks to the sweet shrimp, the ají panca (sun-dried aji amarillo) and huacatay herbs.
