“Holy Spirit … No, we’re not talking about religion here, and there is no need to go to a church. Espiritu Santo is a sublime place to eat typical food from Cartagena and the Caribbean coast of Colombia. For example, this dish: Bass sautéed in coconut sauce, served with coconut rice (white or a savory “black” version), patacón (fried plantain that has been smashed and dipped in garlic sauce before refrying), and salad. In addition, you’ll get fish or seafood soup and Corozo juice (from the fruit of a palm typical in the region). This dish is representative of the flavors on the coast of Colombia. You can also request your fish fried, with the same side dishes.
