Trout from the region around Cusco, and particularly Lake Titikaka, are big, pink, meaty beasts best enjoyed simply fried or oven roasted. At Quinta Eulialia, one of the few remaining traditional local picanterias in the center, they do it perfectly, served up with roasted colored potatoes. Go with a group and try a few dishes, they are all perfectly made and abundant, a reason why this spot is still a local favourite.
