Lupe Torrero moved back to her hometown with her husband Oscar some 10 years ago and began serving up a dish from his home region, the north of Peru, arroz con pato, duck with rice. The dish's fame quickly spread and now the town of Lucre, on the outskirts of Cusco, is full of restaurants serving duck. Her husband has since left, but Lupe still makes the best duck in town in her small restaurant at the entrance to the plaza with its small, tree-filled courtyard out back. Slow-cooked duck served with rice cooked in chicha de jora, dark beer and stock with a sprinkle of coriander and chile. If you can, visit on a Sunday and maybe you'll get lucky and her even more famous duck ceviche will be on offer.
