Another import, this time from Columbia, the folk at the Patacon Pisado have ramped up the classic Cali dish of the same name with a local touch. The plantain is fried, mashed and then fried again for that extra crispiness and then a creamy ajillo sauce of garlic and cilantro with local shrimp is lathered on top.
