The majarisco is one of the gastronomic icons of the north, from Tumbes to Piura and beyond, people get misty-eyed when you mention the word. Green plantain is fried and then roughly mashed, and tossed into a mixture of fresh seafood at hand, usually calamari, shrimp and clams, cooked in chicha de jora with a hint of chile.
