Siete Fuegos

After its autumn 2014 opening, Francis Mallmann’s Siete Fuegos or Seven Fires is firmly on the Mendoza foodie map. A must for visitors to Valle de Uco, Mallmann’s extensive kitchen whips up meaty delights using seven different styles of fire such as al pirulin, where chickens slowly roast dangling from twine, classic grilling on the parrilla or underground smoking. All fires blaze one night a week; the rest of the time it’s open daily. Although we’re in prime beef country, carnivores will adore the Malbec-glazed pork ribs as a meaty alternative to the norm. Those bad boys have been baked and grilled and are as succulent as a ripe peach. A simple potato mash with crunchy toasted pistachios give some fascinating and homely texture.
