Tamales were a pre-Hispanic "fast feast" found all over Mexico and Latin America. Wrapped in a banana leaf, they made for a good bite while on the run. But their careful preparation is anything but fast. The masa - corn dough - of La Catrina de Alcala's tamales oaxaqueños is savory and dense. The inside is filled with delicate shredded pork and fragrant red mole.
