The signature restaurant of the upscale Singular Santiago, this handsome restaurant is truly about farm (or market) to table. Local specialties are fused with flawless technique in clean, delicious food. Their lamb sirloin is outstanding, as is the poached egg with warm mushroom salad served in a puff of smoke. The wine list is short but sweet with excellent small producer selections, including Epu (Almaviva’s second wine), a favorite. Prices are on the high side, given it’s in a hotel. But the quality and service are truly outstanding.
