Tlacoyo de habas

A tlacoyo is an eye-shaped antojito - corn snack - made of blue or yellow masa and stuffed with either beans, requesón cheese or, best of all, habas (fava beans). They are expertly formed by hand and roasted on a dry clay griddle, then topped with nopal cactus, salsa and crumbled dry cheese. Found all over Mexico State and in D.F., they are best when lovingly made by the venerable Doña del Carmen. Maria del Carmen sits at the corner of Malinalco's main plaza opposite the taco vendors, at the southwest corner of the plaza, where the fruit and vegetable vendors begin. She’s there Friday through Mondays only.
