La Carmelita (Food Truck)

Chef Jose Rodrigo Figueroa Sanchez’s cuisine is heavily informed by the home cooking of his maternal grandparents. At his family-run food truck La Carmelita, named for his abuela, Figueroa concocts hearty dishes that pay homage to home style Mexican favorites. The beef tongue torta - breaded a la milanesa - is served with a tangy red salsa, pickled onions and lettuce on a soft, locally baked bolillo – roll. A baked potato packed with butter and house dressing and sprinkled with dried chills and shallots is served on the side.
