Father and son team Claude and Thomas Troisgros have created a culinary oasis in the Rio dining desert. They are descendants of Jean-Baptiste and Marie Troisgros who established the legendary Michelin star temple in Roanne, France: La Maison Troisgros. The history combines well with the future here as combinations of Brazilian "palmito" sit well with french style foie gras.
