At Valentina’s, the finest of Texas smoked BBQ is ‘Mexicanized’, i.e., presented as a taco. Sounds obvious, but no one has done it so well. An oven is attached to the truck, wood piled at the ready and the meats are hickory smoked. Salsas are house made, the thick meaty flour tortillas hand formed – all right in the truck. This is fusion at its best.
