The Hawaiian lunch tray is served on every corner of the island with chicken, shrimp or pork served alongside rica and macaroni salad or some similar combination. Most are quite mundane. At Puka Puka in Hilo, they are prepared with care and skill and offer a very pleasing way to try this island staple. The chicken Katsu is standard but the specials ranging from garlic shrimp to fried oysters are quite worthy.
