Pinche Taquería started out as a street food truck, presenting an alternative to the crunchy, grease-laden shells diners might have been used to; tacos that would force a sentence-enhancing utterance (we’ll let you look up the meaning of ‘pinche’). Their standout modern take on Mexican street food has to be the ‘Agridulce’ taco: an achingly good combo of sweet & sour braised pork belly, candied garlic, cabbage & cilantro slaw, and braising jus for that extra touch of succulence.
